Middle by far has and always been the best of the 3. I don't know if my memory is failing me but hadn't skied Cannon since High School in the 90's til this year. It's wider, but as far as I've seen over the years it was gradual as trees next to the trail got damaged in storms and had to be cut down, not like they planned widening.
