Good points. I'm talking about strict food costs on the plate. If you take into account related food costs such as shrinkage, spoilage, waste, theft, then yes, the cost figure is higher. It helps to define terms, right?

I'm not without experience in the field. National average includes dinner. Killington is lunch. Different percentage for lunch, no? Wouldn't you agree the menu items on Killington's menu should* beat the national average handily? (*Assuming halfway decent management as you point out)

you are not understanding the point i no moose are not the smartest of animal s food cost is one term not on the plate sh*t i dont have time to teach you something you will never comprehend i have to go and count how many snowflakes are on my birdbath

My point is not to compare anyone to McD. I am just saying, the cost of the actual chicken wings is minimal compared to the cost of running the business. If they give away 1 free wing or 20 free wings, it does not really make a big difference in the bottom line. It is heating the building, paying the employees, and other business expenses that cost them. The indirect cost drive their economy.

I know it is not completely the same, but I use to run a coffee canteen. The actual coffee was nothing compared to the cost of even the cup it was served in. The price we set for the cup of coffee was not based on the actual cost but on what the market would bear. We made very little profit on the donuts we sold, but we made a killing on the coffee…enough so that I was embarrassed about it.

Anyway, I think the economy is effecting all businesses, including the restaurants. It is not the cost of food per say. It is the cost of fuel to bring that food to the restaurants, the cost of short term cash to pay for the food and the employees, the cost of health benefits, etc. I imagine it is a delicate balancing act…give away free food is like throwing money out the window, but if throwing money out your window causes people to come to your neighbor hood and buy things then maybe it is not all that crazy. Ask the casino owners.

I said total sales. Percent of total sales. You don't need to look at upscale restaurants. Burger joints do the same thing. Moderate margins on the burgers and huge margins on drinks and fries. "You want fries with that?" isn't heard so often just to be polite.

We've had this discussion before on K's food costs, but I still don't believe it is as high as 30%. (strictly food costs, beef patties, bun, mustard, soda, etc)
30% might have been the upper limit at ASC for the pricing on any individual item. Dunno. If I think of it, I'll ask the next time I have the opportunity. I suppose 30% as an upper limit makes more sense. For example, the pricing of fries and soda in the KBL are certainly all out of whack with 30% food cost.

I've run cup soda. It is immensely profitable. You buy syrup by the 4 gallon case. You have a CO² bottle, and the carbonator is inside the unit on a cold plate. The rest is tap water through a filter. I forget which is more expensive the cup or the syrup, both are pennies. We are talking cost factors of 5% or so at Killington's prices. There is more maintenance and more up front costs than cans, but for volume it can't be beat. I notice there is no can soda at Killington, which costs 5 times as much as cup soda. Same idea with fries, coffee, hot chocolate from a dry mix. I think mellowyellow has LITTLE knowledge about cup soda at a resort lunch operation, or he wouldn't be quoting national averages for food costs.

I usually eat a few wings along with a burger/sandwich and a few beers. I'm not giving my money to anyplace that stopped doing free wings. No free wings I'll walk out and get a sandwich at the market. No beer, no burger, and not my usual 40% tip on the tab. I'm not cheap, you want to be cheap with me you can't have my money. I'll go to Taco Hell in Rut Vegas

phat italian is great. some real good sandwiches, i like that spot better then killington deli. plus the owner from k deli is a doosche.

he bet professor moose $20 the pats would beat the giants, and when it was brought up he freaked out. that dude is not cool.

I think you are talking about Blackies. That place kicks ass. One of the things I miss from when my ski house was in Bridgewater. We would call our order in when we left the house and it would be ready when we walked in the door. The guy got so used to us that he would just toss the sandwiches to us as we walked in the door. Best sausage egg and cheddar Ive ever had...
