Agree that they are all over the U.S. I think you see a lot of them in philly because PA apparently has pretty strict rules on liq licenses. It is def one of the great aspects to philly's fantastic restaurant scene. Also, I never heard of a stem charge either, often there is a corking charge ($5) but not always.
Staying in Philly one more night. Three nice meals since meals since I've been here (paid by the firm) but I think it's Subway tonight. Weather is too crappy to venture too far.
Brrr it's cold. According to the weather report it's supposed to snow here. Snow up in my neck of the woods in Northern NJ. We like snow.
